INGREDIENTS& 2 teacups chopped rehydrated pitted prunes; 1 egg; 1 1/2 teacups of flour; 1/2 teacups white sugar; 1/2 teacup milk; 3 tablespoons brown sugar; 1 teaspoon baking powder; 1 teaspoon cinnamon; butter for the muffin cups PREPARATION: Preheat oven and butter muffin cups; whisk together the egg, sugar, flour with the baking powder mixed inside; add milk stirring until properly combined; add the prunes; stir to obtain a homogenous batter; pour into muffin cups and sprinkle brown sugar and cinnamon on top; baked at medium heat for approximately 30 minutes; cool before removing the muffins from the cups.
